Yorkshire Pecorino
Yorkshire Pecorino Cheese Ltd are a small artisan cheese maker in Otley. Pecorino being the Italian for Ewe’s milk. Mario the Founder was raised by the Sardinian sea before moving to Yorkshire in 2001. Mario wakes at 3am every day to start the process, where each individual cheese is carefully moulded and perfected until ready to be presented at local farmers’ markets or here at Fearns.

Deep-fried smoked tofu
Tofoo has become a staple brand for all tofu lovers, and is one you’d recognise from most supermarkets. But it is in fact a business based in Malton, Yorkshire. The smoked variation is organic, all-natural and smoked with beechwood for a distinctive taste.

Whipped tonka cream
Featuring in the sticky toffee pudding, the tonka bean is Jade’s favourite spice to cook with and flavours the whipped cream in your dessert. Often compared to vanilla bean, tonka has been labelled ‘the dessert spice’ with sweet notes likened to vanilla, almonds and honey. However it’s not all sweet… it actually contains a high level of the chemical coumarin which, in high doses, could be deadly. But we’re talking 25 tonka beans at once which is hundreds of our sticky toffee pudding all in one sitting, so you’re pretty safe!
